Tansy Good’s restaurant, Tansy's, in Carlton North and later Spring Street was one of the heaviest hitters of the '80s and '90s. The menu is built on what she can get her hands on including from her gardens outside, with rigorous French technique underpinning it all. Tansy was named a member of the Melbourne Food and Wine Festival Legends Hall of Fame in 2020: she trained many of Victoria’s finest chefs (Andrew McConnell of Cutler and Co and Super Normal, TV host Karen Martini, Rita Macali of Super Maxi to name three) and her Carlton restaurant Tansy’s held three hats in the Age Good Food Guide for eleven consecutive years in the 1980s and 1990s.
