This is the best breakfast restaurant in town. There is usually a wait, and they won't take reservations on the phone, so get there early and put your name in. The best items are the Santa Fe cakes and the Santiago Skillet.

An awesome breakfast and brunch spot located in downtown carbondale. Order the Huevos Rancheros with corn tortillas, organic eggs, and green chili sauce. You can order a side of Santa Fe Corn Cakes (cornmeal, green chiles, cheese, bacon... delicious!) for just a few dollars extra.
